Chili Recipes – Made Bouncier by Beans

The dish that we today simply know as ‘Chili’ has a history as spicy as the dish itself, even though the chili recipes have been tweaked and turned to the individual tastes of the people or societies that enjoyed them through the times.

A Meaty Origin

The full name of this delicious dish is ‘Chili con carne’, which is Spanish for ‘chili pepper with meat’. The original chili recipes were essentially pounding the chili, meat, salt and some fat together to make a brick that could be simply boiled when required on a trail for example.

Although, as the name suggests, it is usually made with meat added to the basic ingredients (chili peppers, garlic, onions and cumin making the basic sauce and then throwing in beans and tomatoes optionally), a delicious variant can be made for vegetarians too.

A Beany Recipe - Three Bean Chili

This is one of the best chili recipes for vegetarians. It is fun and easy to make, giving much joy to the taste buds. To enhance the experience, it is recommended that it be served with chopped scallions and shredded cheddar cheese.

What will be needed:

• Diced tomatoes - 2 cans (16 oz.)
•Onions - 2 medium, chopped
• Garlic – minced, 6 cloves
• Ground cumin - 1 tablespoon
• Chili powder - 2 tablespoons
• Jalapeno pepper - 1 large, de-veined, seeded and chopped
• Green pepper - 1 medium, chopped
• Red pepper - 1 medium, chopped
• Hot pepper sauce - 1 tablespoon
• Black beans - 1 can (14 oz.)
• Dark red kidney beans - 1 can (16 oz.)
• Vegetarian refried beans with chilies - 1 can
• Beer - 1 cup
• Salt - 1 teaspoon

Cooking instructions:

- Add the olive oil into a large pot and warm over a medium heat.
- Add the onions, all the peppers and the garlic.
- Sauté for 5 minutes until all ingredients are soft.
- Add the beer and stir well.
- Add the tomatoes, black beans and kidney beans – make sure you stir well until it is all well combined.
- Add the ground cumin, chili powder, hot sauce and salt.
- Stir in the refried beans to thicken the chili.
- Reduce the heat to minimum and let it all simmer for about 15 minutes.
